I consider myself a experienced pork rind gastronomer. Having started life a wee tyke in a southern farming community and family, the prime porker was always high on our list of edibles. Not the least of which was the fresh crackelins and rinds when the pigs' days were over. If you know these words you know where I'm coming from. Fast forward several decades and you'll get an idea of the amount of expertise I have in matters of the hog. My life's journey has taken me away from the farm, and the country cooking that I was raised on. However, I constantly attempt to recreate the tastes and flavors from that blessed time gone by. To that end I have tried every brand of pork rind I can get my hands on and had only found one commercially produced brand that fit the bill, until now. I say that brand has been dethroned and there is a new king! Hogs Heaven has ascended to the upper crust of my palete's appraisal and being a women owned, southern company is clear fat in the fryer! My grandmothers, God rest their souls, would be proud, for they were strong southern women not afraid to take on challenges.
