    Cacao Chai: Chai made with cacao shell has a unique and distinct flavor profile compared to regular chai tea. The addition of cacao shells imparts a subtle chocolatey flavor to the tea, which blends well with the traditional chai spices like cinnamon, ginger, cardamom, black peppercorn and cloves. The taste of chai made with cacao shell is less sweet than a chai latte, which is a Westernized version of chai tea that is typically sweeter and less complex in flavor. According to Mayan religious beliefs, Cacao had a divine origin. In one of their creation stories, Cacao is one of the precious substances from the mountain of sustenance.     Popularized by Queen Victoria, English Breakfast is a hearty black tea blend which is complemented by milk and sugar. Created by an American teamerchant in 1843, the blend originally used Chinese teas. Later blenders use tea from gardens across the British Empire, including Darjeeling and Assam (India), and British Ceylon (Sri Lanka). The British East India Company reintroduced and imported English Breakfast to America. This blend harkens back to the original blend and is a combination of teas from China, India and Sri Lanka.

    Chicory appears in colonial American references as an additive to coffee. The French were deprived of coffee during Napoleon’s “Continental Blockade” in 1808, and began using roasted chicory root to make coffee stores last longer. After the war, the practice continued, as it was considered to improve the flavor of coffee. Areas of French influence such as New Orleans also used chicory, increasing in consumption again during times of war in America, especially during the Civil War.  Coffee flavors are complemented by a wild, bitter roasted root flavor.
