Beaufort Olive Oil Company is owned and operated by Clarke Merrell, executive chef and owner at 81 Hospitality Group. The shop specializes in premium extra virgin olive oils, aged balsamic vinegars, gourmet and flavored salts, as well as artisanal and local culinary provisions. Beaufort Olive Oil Company is committed to providing customers with the freshest extra virgin olive oils by working with a skilled and experienced importer who collaborates directly with growers in both the Northern and Southern hemispheres. As a result, the extra virgin olive oils are switched out twice a year to reflect the seasonality of the olive harvest in each hemisphere. 

Customers can expect to find olive oils from various places, including Italy, Spain, Greece, Tunisia, Portugal, California, Australia, Argentina, Chile, Peru, and South Africa. Additionally, the shop carries aged balsamic vinegars imported from Modena, Italy. All balsamic vinegars are naturally barrel-aged for a minimum of 12 years using the traditional Solera method, resulting in rich, sweet, tart, and balanced flavors.
