Hubs Peanuts Hummus

Ingredients
Peanut Hummus
- 1 cup hubs single origin peanuts - simmered in water for 30 minutes and drained, liquid reserved
- 1 cup cooked chickpeas
- ½ cup olive oil
- 1 tablespoon minced garlic
- 2 tablespoons tahini
- 3 tablespoons lemon juice
- Zest of 1 lemon
- 1 tablespoon cumin
- 1 tablespoon salt
Pepper Vinegar
- 1 cup apple cider vinegar
- 2 tablespoons pepper of choice, diced
- 1 tablespoon aleppo pepper or paprika
- 1 tablespoon salt
- 1 tablespoon sugar
Directions
Note: This works best in a high powered blender. A food processor can be used alternatively.
Add all ingredients, except reserved water to blender. Mix on medium speed, gradually increasing to high, add water until desired consistency and allow to blend for 2-3 minutes to achieve a smooth texture. Blend for 5-6 minutes if using a food processor. Season to taste.
To serve- drizzle with pepper vinegar. This can be served with pita bread and vegetables. Charring a few more hearty vegetables or serving with fry bread would make this extra special for a starter course.
Set oven broiler to high. Drizzle vegetables of choice with olive oil and sprinkle with salt. (I used squash, shishito peppers, and pobalnos) Place on heat safe baking sheet and turn occasionally until brown and slightly charred in places.
In a small bowl, combine all ingredients, whisking thoroughly. This can be made in advance. Store in a sealed container, refrigerated, for up to 10 days.
