Ingredients
For the barbecue vinaigrette:
- ¼ cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- ½ tablespoon dijon mustard
- 2 tablespoon barbecue sauce
- ½ teaspoon salt
- ¼ teaspoon pepper
For the roasted vegetables:
- 1 cup sweet potatoes, peeled and diced
- ½ cup corn, off the cob
- 2 tablespoons barbecue vinaigrette
For the salad:
- 2 cups arugula
- 2 cups spring mix lettuce
- ½ cup cherry tomatoes, halved
- ¼ red onion, sliced
- ⅓ cup feta cheese, crumbled
- Salt and pepper, to taste
- 2 cups Ella's Popcorn BBQ Joy
Directions
Make the vinaigrette: In a mixing bowl, whisk all ingredients and set aside in refrigerator for at least 1 hour before serving.
Make the roasted vegetables: Preheat oven to 400 degrees. Line a large baking sheet with foil. Add sweet potatoes and corn. Drizzle barbecue vinaigrette on top and mix until vegetables are well coated. Roast for 25 minutes, stirring halfway through for even browning. Remove from oven and allow to cool.
Make the salad: In a large bowl or platter, combine arugula and spring mix lettuce. Drizzle a few tablespoons of barbecue vinaigrette on top and mix until dressed to your liking. Top with roasted vegetables, tomatoes, red onion, feta cheese, salt, and pepper. Add Ella’s Popcorn BBQ Joy and serve immediately.
