Make the vinaigrette: In a mixing bowl, whisk all ingredients and set aside in refrigerator for at least 1 hour before serving.
Make the roasted vegetables: Preheat oven to 400 degrees. Line a large baking sheet with foil. Add sweet potatoes and corn. Drizzle barbecue vinaigrette on top and mix until vegetables are well coated. Roast for 25 minutes, stirring halfway through for even browning. Remove from oven and allow to cool.
