Salmon Tacos with Mango Peach Salsa

Ingredients
For the Peach Salsa

2 fresh peaches, diced

2 mangoes, diced
-
½ red onion, diced
-
1 jalapeño, diced
-
Juice of 1 lime
-
1 teaspoon salt
-
2 tablespoons cilantro, chopped
For the Tacos
-
2 fillets salmon, grilled
-
½ cup cabbage, shredded
-
2 tablespoons Sriracha Steak Sauce
-
4 medium-sized tortillas
Directions
Make the Mango Peach Salsa
Add all ingredients to a small bowl and mix to combine. Season with salt to your liking. Allow to rest in the fridge.
Make the tacos
Brush the salmon fillets with a little oil and grill over medium high heat (around 425 degrees) for 6-8 minutes on one side then an additional 2-4 minutes on the other.
Allow the salmon to rest a few minutes, then shred and place into a bowl.
Assemble the tacos: place tortillas down then top with cabbage, salmon, mango peach salsa, and drizzle with sriracha steak sauce to your liking.
