In a heavy pan, heat two inches of peanut oil to 350 degrees.
Separately season flour and cornmeal with salt and pepper. Whisk eggs in separate bowl. Working one at a time, dredge pickle slices first in flour, then egg wash, then cornmeal.
Working in batches, fry pickles for 3 minutes. Remove from oil with a slotted spoon and transfer to paper towels to drain.
