4 bone-in, center-cut pork chops (1½ to 2 inches thick)

Directions
Preheat a grill to high heat. Rub both sides of the pork chops with olive oil. In a small bowl, combine paprika, salt, and pepper, then rub the mixture evenly over the chops.
Sear the chops over direct heat for about 2 minutes per side, until lightly charred. Move the chops to indirect heat, reduce the grill to medium, close the lid, and cook until the internal temperature reaches 145 degrees, about 15 minutes.
Transfer to a platter, tent loosely with foil, and let rest for 5 to 10 minutes. Spoon about ¼ cup of Pickled Pink Spiced Watermelon Pickles over each chop before serving for a spicy-sweet finish.
