In a small saucepan, gently warm maple syrup over low heat. Remove from heat before it begins to simmer. Stir in peanut butter and mix until smooth. Allow to cool for 10 minutes. Mix in chopped Hubs peanut brittle pieces and set aside.
Make the pancakes
In a food processor or blender, add Hubs peanut brittle and pulse into small bits. In a large bowl, combine peanut brittle bits, flour, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, eggs, and melted butter. Pour wet ingredients into dry and stir until just combined. Do not overmix.
Spray a griddle or nonstick skillet with cooking spray and heat over medium. Add ¼ cup of batter to hot skillet and cook until bubbles form and pop on the surface of the batter. Flip pancake and cook for 2 to 3 more minutes, until golden brown on both sides. Remove from pan and repeat with remaining batter.
To serve, stack pancakes and drizzle a generous amount of peanut brittle syrup over the top. Enjoy immediately.
