After his trip, he came back to his home in Tennessee and started researching the best alternatives for red pepper flakes. After a number of months of testing different peppers and spices, he finally chose his five favorites. Shortly after, he opened up a small family-run facility in Knoxville where the local fresh chilies are dehydrated, ground, and packaged to be shipped.
