Liam Becker and John Berdux have been running their local honey operation, Apis Mercantile, on John’s Island since 2017 with one goal in mind: Emphasize the importance of sustainable and ethical sourcing practices while making local honey more accessible. Becker and Berdux partner with a wide variety of local apiaries across the Southeast to ensure that they have a dependable supply that maintains the same level of high-quality honey in every jar they fill.

    Apis Mercantile's Southern Wildflower Honey reflects the flora found throughout the Lowcountry of Charleston, South Carolina. The color and flavor of honey are determined by the nectar sources the honeybees foraged to make it, and the honey will vary throughout the year depending on what's in bloom.

    Apis Mercantile’s new Fermented Garlic honey is the funkiest honey you’ve ever tasted, in the best way possible. They combine sliced fresh garlic, apple cider vinegar, and their Southern Wildflower honey, age it for three months, and the result is a funky, sweet and sour honey that tastes great with salmon or roasted veggies.

    Apis Mercantile Bourbon Barrel-Aged Wildflower Honey

    Apis soaks their Southern Wildflower Honey in charred White American Oak barrels still wet with bourbon for three months to allow maximum absorption. When the honey is leaking out of the barrel, all the bourbon has been absorbed, and the honey is ready for jarring.
